The buyer already knows its more valuable than shell corn or he wouldn't be buying it. He just thinks it shouldn't be more valuable than shell corn to you the seller. As you said you're selling more nutrients this way, plus you're also selling more bulk filler that the cows use. On the down side that cornstalk is what gives you the organic matter to keep your soils in better shape, so that's value that you are giving up and want compensation for.
