Part of the difference in flavor comes from large farm vegetable varieties having been bred for longevity in shipping ripening while in motion. Bred to produce a consistent sized product where all mature the same day which have also been manipulated by timing irrigation applications while growing in warm climate soils that would have been desert without the irrigation canals.
Locally grown is the modern buzzword. Great, what's local? In Iowa nothing grows outside from October to April. So it has to be grown in a greenhouse (with much added energy unless waste energy from an ethanol plant can be used like at Cargill Cedar Rapids) or shipped from somewhere else in the world to have fresh produce inn the winter. Even in summer, some popular garden produce grows too slowly. We might get a month of harvest for some crops.
