I like to see beans between unifoliate and 1st tri. What I don't want to see is the hook trying to drag the cotyledons out of the soil - this is a "neck-breaker". You appear to be in an excellent window.
To be even better, find a hot, sunny, windy day where the beans have begun to go flacid from the heat stress. First thing in the morning when they are turgid, they are more susceptible to damage.
