NW Washington | Root cellars were pretty common on old farmsteads. They keep things cool, dark and humid.
You also have to be careful what you store together. Some things like apples give off a ethylene gas which cause other things to go to pot.
Commercial apples are stored in a cool "Controlled Atmosphere" to control the ripening process.
Spud storage is just above freezing a about a humid as they can get it. They also spray the spuds with a chemical to inhibit sprouting. Onions need to be cool and dry.
