Maybe not as deep as corn. Sunflowers are a dicot like soybeans, so they have to push those cotyledons up to emerge. But, as you correctly stated it's best to plant to moisture. Depending on how many you have to plant, you might plant shallow and help your daughter "irrigate" with the garden hose once a day.
