I forgot, a good rub will help a lot. I read dloc's comments, and he is right 165 is maybe a bit high. I also like to glaze a sauce on it as it reaches about 120 deg internal temp. Gets a nice crust that way. You can also inject with a 50/50 mix of apple juice and shiner bock. Makes for a tasty treat
