Palestine, IL 62451 | After removing the membrane on back I like to put a little rub on both sides, wrap in saran and sit for awhile before putting on the smoker( without the wrap). After about 5-6 hrs I will lightly sauce both sides and again wrap in saran with a couple of holes in it for drainage and put back on for 30-45 minutes. These are babybacks, spares take more time. I try not to use very much spice or sauce, the meat is the highlight the sauce and spice just icing on the cake. | |
