North Central Illinois | I've only ended up with rye contamination in my purchased organic wheat seed once and it was under 1%. Ask for sample information from your suppliers before taking delivery. Demand 0% "other crop" seed or you won't accept it.
If 3 organic suppliers can't meet that criteria using non treated non GMO seed is permitted under USDA NOP rules.
I used a conventional variety for a number of years because there weren't organic varieties on the market at the time with high enough fusarium head blight resistance scores. Now there are more options and I've found an organic variety that is good enough.
Edit to add: unless the wheat variety you have is a rare specialty type, follow Peter's advice and just get quality seed from a reputable supplier.
