If you have cows already, a couple heifers is a good project.

Right now, with eggs at $6 a dozen, some laying hens might be worth considering.

Are they good at welding or woodworking? If there might be a market for things like custom bird houses, that can be a thing. Know a guy who started out doing that, kept turning his profits back into his business, and wound up making custom Cedar furniture and Cedar chests out of your own (or his) trees using his sawmill. He had a special 'style' where he would cut a slab, sand both sides, then 'flip' it and put it against the other one so that the grain would have a mirror image effect. His little spare time project grew to where he had 3 employees up to his retirement.
