Definitely not an expert on the subject but as a family we pay attention to the ultraprocessed foods closely. Blessed with a wife and adult children that are excellent cooks and bakers. My understanding with the seed oil relates to how they can be processed and hydrogenated into fillers, stuffers and binders. Definitely a place in this conversation for greater adoption of high oleic soybeans as they have a much healthier oil fat profile.


Do some looking into phytosterols if you're interested. Some say they're good, some say they're bad. All plant fats have them regardless of saturated vs unsaturated ratio or linoleic vs oleic acid content. Some think phytosterols may be a major driver of atherosclerotic plaques. People with phytosterolemia tend to die very young from heart disease.

Anyways, interesting reading if you are so inclined to go down the rabbit hole like I am.
