A local town had a problem with high nitrates years ago. A local guy that was pretty handy figured out how to hook up a huge pump that the town had sitting around. They got it going and pumped a lot of water out of the well and as far as I know it's been fine since.
Otherwise a simple RO drinking water system is probably the best bet.
