| A gentleman asked this in a training session I was in a few years ago. I think what you are basically seeing is how a flat map is shown on a curved earth. You can R. Click on the grower name and Edit and then go to the Projection tab.
For myself, I had NAD 83 and Iowa North for the northern 1/2 of Iowa. but I do remember, that if you are on the east or west side of the state, you may have a little twist in the map appearance. I think you can try some different settings, but they recommended leaving as the NAD setting and your region of your state to have the most accurate maps overall. They also mentioned that if you were exporting things out, it wouldn't matter what your projection was set to.
