Out west,in the org veg world,R/R alfalfa for the duration of set aside,no apps after certification timeline start.Fixes nitrogen ,slurps up Colorado river water,harvest/bale and send to China and or Japan for animal feed.Just so environmentally sound that the peasants suck up that organic lettuce /carrots like mad.East coast IDK,but up here we would use a rye year/and then maybe an oats year with animal manure if possible/then a veg crop that would be a transition crop .Not any demand here for alfalfa hay.In fact very little demand for up scaling org veg crops as the west coast guys have bought the shelf space from chains.
