This is the one I've made several times this winter:
3 - 4 pound arm roast, cubed
2 large baking potatoes, cubed
1 pound baby carrots
1 - 14.5 oz can Hunt's Diced tomatoes (with Basil, Garlic and Oregano)
celery - several stalks
approx 2 quarts V-8 tomato juice
2 - 3 good sized onions, quartered (or smaller, if needed) For me, the more onions, the better.
1 tablespoon salt, 1 teaspoon - pepper
Covered dish for (approx) 3 hours @ 325 | |
