Subject: Lunch today - meat soup



Pittsburg, Kansas
What we had for lunch today.

Meat soup was the main dish. Wife saves leftover meat from a few days then will make a "meat soup" out of whatever we have. This one was pork loin, pork ribs, a little bit of bacon and some chicken. Of course onions, as she loves onions. She saves the liquid off various meat dishes for the broth. In this particular case we had a rotisery chicken from Wal-Mart the other day and she used the bones after we were done eating on it to make chicken broth. So this meat soup had a base of chicken broth. It was delicious and a good way to use up leftover meat.

The bread was something new she tried. It was a microwave bread made from almond flour, eggs and baking soda. It was not bad. Good enough to make it again and maybe add some cream cheese she said. 90 seconds in the microwave after mixing it up.

Some green olives and fresh slices of cucumber for a little taste variety.

Had an apple from our home tree that we each had a half for desert.

Pretty yummy. Eating low carb we eat pretty good. The apple half was about the only high carb thing in the whole meal. We normally do not eat apples but off our tree we will make eception in the fall for a few weeks. We are in Arizona for a month but brought some apples with us.
