The same way I just described, the ridges will be firm whether it's 2 weeks or 7 months. If you go in and tear them up you've lost everything you have tried to gain in establishing the ridges. You can cultivate the beans with a heavy residue cultivator. You apparently don't have a freeze/thaw cycle so it could be a little different for you.
