Selling beef by the cut sucks, it takes tremendous scale to make that work and when you are at that scale you aren’t doing much else because you’ll be behind a counter selling meat.
The Sparta sale barn has done a nice job selling our extra Hereford cattle that don’t go for freezer beef. They top the auction when we send them. Talk to the manager, Hut, there before you send them and he’ll let you know when the right buyers are coming.
