Actually, longhorns won the west and herefords came in as an improvement once the conditions were a little easier for cattle. Longhorns can pretty much survive on rocks and sagebrush if they have to. No one ever said that made for good meat, but a thin cow that survives to wean a calf is better than a fat dead cow.
