We start cutting when beans are around 15% and start putting them in the bins. Like you said by end of the day will be dryer. So, they are in layers in the bins just run the air and you'll be fine. Do it every year with at least 8 bins and have never had bad beans. Like others have said they will all come out the same moisture. Most of the time we'll just let the fans run after the bin is full night and day for about a week then cool colder in winter. You about have to run the fans in the rain or have a leaky bin to have bad beans.
