Shelling the peanuts would be the not so fun part. Grandma used to make all sorts of stuff when I was a kid, she kept the guy who graded the peanuts at the buying point supplied with all the peanut brittle he could eat and he gave her the shelled peanuts after grading them.
I would think roasting the nuts and grinding up with butter, honey and salt would be a good start.
