When baking soda is used to cook meat, a minimal amount, like 1/4 teaspoon, is used for about 1.5 pounds of meat. I have watched several cooking shows and have only seen them use baking soda on ground beef, pork, and ground turkey, usually when making a meatloaf. It may have been used on a stew, ragu or stir-fry. But I don't think this is something you want to do with a nice prime T-bone.
