A good deep fried fish requires the temperature to be over 350 degrees. I like to start at 400 degrees and add the fish and the temperature shouldn't drop below 350 or you will be eating grease balls. I generally use canola oil. A lot of the animal fats have a low smoke point. Peanut oil has a high smoke point.
