Subject: What we had last night



Pittsburg, Kansas
At the Black Durgon Inn Christmas party.

A good friend brought it in his luggage from Tennesee and another good friend that lives here prepared it. It was fabulous. The preparer made a comment he got it a little over done from his perspective but I told him it was perfect for me. Both he and my wife prefer it a little more rare but for the crowd (that some like well done) it turned out perfect. He actually kept a pan on the stove to sear the slices that anyone wanted more done. Only 3 out of almost 30 wanted it a little more done so they got it.

It had the cap on, bone in while being cooked. He has done it other ways but that was the way for yesterday's feast.
