1/2” pex will go around bends ok, 3/4" and up will tear apart the clips over time unless you use some ferociously strong conduit clamps on either side of the bend. Make all your hot lines a 1/2" dedicated runs straight from the water heater to the appliance. Cold can be trunk and branches but I would put elbows in if the trunk is going to be 3/4" or 1”. Chlorine and hydrogen peroxide will eventually eat any metal fitting so I would consider poly fittings. I battled the 3/4” and 1” pex enough that I would rather just use PVC than pex in those sizes.
