I did some several years ago when I remodeled my second bath. Water lines were in a crawl space, pex was much easier, and quicker than copper. (Ive done a lot of copper also). When we remodeled a house for my daughter last winter I found 100' rolls of 1/2" pex on clearence at Mills Fleet Farm. A friend of my daughters is a journeyman plumber. He had did quite a bit, but used solid pipe and plastic fittings. I did remove all the plastic fittings and replaced with brass. don't cheap out on the clamps either and buy a good crimping tool and a good tubing cutter. Makes the job go faster, easier and with non leaks! LOL. If your going in existing walls solid pipe might be easier to get it where you want otherwise Id use roll pex. Good luck!
