Pittsburg, Kansas | Same experience here. Once I got rid of most of the carbs, back and knee pain went away. Hasn't came back going on 5 years now.
Sugar is even worse than regular starchy carbs as it is half fructose.
Gluten affects everyone negatively. It is just that some are way more sensitive than others. Messes up the tight junctions in gut and causes leaky gut and inflammation.
