I know I'm late to the party here, but are you wanting to change the harvested acre number? Or am I misunderstanding? You can adjusted the harvested area where you post cal the bushels. In Field Analyzer, with the harvest map pulled up, hit the edit button in the bottom right, then hit Area Harvested and Post Cal. See the screenshots.
