We normally use yellow corn meal mix with salt and pepper added to taste. Sometimes for a little extra kick I'll give the fish a soaking of Louisianna Hot Sauce (Tobasco is too hot for some that I feed) before I put it in the meal. I've also substituted Cajun creole seasoning for the salt and pepper and it turned out real good.
