'Nother one, from a friend. We just tried it last nite for supper, and really liked it. Brown 1# hamburger together with a medium chopped onion and a chopped green pepper. Drain Add 1 12oz jar salsa, 3/4c fat free or light Miracle Whip, and 1T chili powder. Mix (can add jalapeno peppers to this if you like) Spray a 2qt casserole with Pam, and layer 1c crushed baked tortilla chips in the bottom Spread 1/2 of the prepared meat mixture on top Sprinkle 1c low fat shredded cheddar cheese evenly over the meat mixture Spread 1 can drained chili beans, black beans, kidney beans (whatever you like) over the cheese Repeat crushed chips, meat, and cheese layers Bake at 350 for 20-25 minutes Top with shreadded lettuce and chopped tomatoes, serve with fat free sour cream and taco sauce. |
