if you pound it thin before you cook it you've made a schnitzel. Pork schnitzel is normally served with a sauce made of the pan drippings, a little chicken stock, some dill and some sour cream. Just make sure you add the sour cream right at the end when making your pan sauce. Don't let it boil, it will separate.
