I know onions are great for flavoring soups, burgers, and so much more. For years I’d avoid them especially if raw. And I still won’t eat them raw. Someone cooked fajitas with finely sliced onion and jalapeños that were cooked until litely charred in olive oil or grape seed oil. I cook them first at the beginning and then set aside to then cook the meat. That wonderful sweet n smokey flavor and different texture is much more appealing. It totally changed my thoughts about eating onion.

Thinking about getting someone to help me cook some Carne Guisada with the charred onion and jalapeño incorporated into the meat and sauce at the end. That smokey flavor should enhance things a bit. Cook some rice and refried beans to go with it. Serve on either fresh homemade tortillas or store bought.

Edit: tempted to add freshly cooked shrimp with a spicy garlic seasoning. Will have to play with the seasoning to see what works and what doesn’t.
