I threw this dish together tonight for KSBoy and me, from ingredients he already had.  We worked around the farm all day together and by the time we packed it in, it was too late to look like something decent and go into town for Mexican like I wanted, so we cobbled this together and it turned out great!  I've also posted this on AgTalk+.  Enjoy!

"Use Whatcha Got" Fajitas

Tortillas (any)
3 chicken breasts (boneless/skinless)
1/4 t ground red pepper
1/2 t chili powder
1 small can diced jalapenos
2-3 T tomato soup concentrate
1 small onion, sliced or diced
Oil for sauteeing
Cheese (garnish)
Sour cream (optional)
Romaine (or other lettuce)

Saute chicken and onions in oil till halfway done; add in red pepper, chili powder, and jalapenos.  Add in tomato soup concentrate, simmer covered 10 more minutes. 

If you have a gas stove, turn on stove to medium and heat tortillas one at a time directly on burner for 10 seconds, turning every 2-3 seconds. 

Serve chicken mixture in tortillas, top with cheese, sour cream, and romaine as desired.

Serves 1 hungry woman and 1 hungry man.
