I don't recall something like this to be mentioned here and maybe someone low carb may have tried it. It looked interesting and so I tried it twice so far with satisfactory results. Simple, low carb, lots of protein, and tastes good.

The basic recipe is 1 cup (Greek) yogurt, 3 eggs, 1/3 cup sweetener. Combine and bake for 20-25 minutes at 350 degrees.

Both times it tasted good. The first time was following the recipe and used bigger pan than suggested so it was thin. Second time I doubled the batch for pan size and took much longer to bake. Both times the taste was good, the texture was very much like cake though didn't look a lot like cake fluffiness, and was sweeter than needed so need to work on how to lower sweetener without any effect on texture. I used Greek yogurt.

This borders on quiche recipe and few more ingredients is close to cheesecake so I can see how some crossover occurs or recipe could be shifted in that direction. Tasted wonderful with some berries on top.

Any one try this or healthier dessert replacement recipes?

Im going to try this tomorrow I’m thinking of cooking it longer and hotter.
