I had similar feelings in the past on crock pot roast. Like others have mentioned I think an Instant Pot does cook them better, but I dont think Ive done traditional pot roast in it. We like the Mississippi roast, can find recipes easily for that. Also have started to do stew in Instant Pot. French Dip or Italian Beef sandwiches is also hard to beat for using a roas.
