Late in garden season when we've got a bunch of stuff to be used up, we make pepper stout beef.   Several roasts in the smoker till they've broken down enough to be shredded, then put in pans with peppers, onions, and some Guinness beer and simmer at low temperatures until everything is tender and a majority of the liquid is rendered down.   Vac seals very well for the freezer, great homemade meals for busy nights when nobody has extra time to cook.
