Western Oregon
A good meal is pot roast, quick and easy. Any lean red meat, chicken or pork loin. Cut in 1" pieces in fry pan, brown in a small pat of butter. Add some water to a pot, add potato, carrots and stalk of celery, diced, salt and pepper. I like a pat of butter to season the carrots. Also a little dried parsley if I don't have fresh. By the time meat is browned good on all sides add a little onion to break down and gives a little flavor and moisture, cook 5 minutes and add to vegetables in pot, deglaze fry pan and add drippings. Cook 5 minutes to meld flavors. We really like chicken pot roast.

Spaghetti, There are some great gluten free spaghetti noodles and other gluten free pasta. I brown the grass fed ground beef or elk, season with salt and pepper. Add 2-3 fresh tomatoes diced, or a can of diced tomatoes with juice, a little onion and dice a stalk of celery, cook 20 minutes. Add water as needed. Very quick meal

Chili, the same start as spaghetti but I add a can of Chili beans instead of pasta, the can of diced or 2-3 fresh tomatoes. Can use a can of your favorite beans and spices of choice. Best the next day after heating up. Also good 1/2 beef, 1/2 sausage....James
