Terminate the stand, plant a spring annual- harvest for hay, follow with a summer annual, fence into 4 paddocks. Start grazing 1-2 paddocks, harvest paddock 3 for more hay and let the livestock harvest paddock 4. Paddock 3 will regrow and harvest that with the livestock after 4 is grazed. Cows vs calves doesn't matter, just base it off your fencing situation.
