Generally 2 beefs at a time. Pigs are a lot easier can do 4 in a short day. Have anywhere from 8 to 15 people with knives or wrapping. Sometimes to many actually slow things down. On pigs I cut out the bacon and my neighbor has a smoker and cures and smokes them for me
