You ask what would "I" do with it- the poster below nailed it - rent it out...
but here is what you are hinting? If I was 25-35, had 75 acres grass in good condition. lived somewhat close, had family that was somewhat supportive, had financial end in reach. At a minimum Id set up rotational grazing....water, fence. as below suggested, leave your options open.
IF I was on or very close location, and the above are all in place Id go with an intensive sheep operation, like the 3 crops in 2 years polypay based operation. raise some feed on the extra acres. Run and raise guard dog breeds. Cattle are cool, but wrong time to get in, but could be wrong...unless you can develop heifers, AI.... you leave out like 90% of the info.. Have fun!
