Near Intersection of I-35 & I-90 Southern Mn. | Seems to me that your idea of using two separate 3-way valves should work. You would need to remember to have both valve handles pointing to the same source. That source would then be in control and the 3-way valves would block out the other source.
Fingers suggestion should work also although the diagrams seem to suggest using one source to two different "loads". This would be a common use to get double duty out of a single hydraulic source such as needing an extra pair of remotes on a tractor. The diverter valve would allow you to control one load or another.
Your use would be the opposite in that you would be using one of two sources to feed one load. This may not make any difference but I have seen strange results with hydraulic valves when the flow is opposite of what was intended. My observations probably wouldn't apply in this situation
