AandM,you can haul that to a trailer dealer,get an appraisal.Give this to your insurance company.They should insure for that value.Likely not as high of value as you would like but higher than their book.Friend has my old 2000 PB 379,it has new frame,new engine,new trans,new rears,new radiator,new bunk.They would look up in a book and say 25 grand,he has 125 grand value stated on policy.
